Ingredients

For the cheesecake:

  • 12 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 cup crushed vanilla wafers or graham crackers

For dipping and decorating:

  • 12 oz white chocolate chips or melting wafers
  • 8 oz dark chocolate chips or melting wafers
  • Red candy melts or red chocolate (4 oz)
  • Blue candy melts or blue chocolate (4 oz)
  • Red, white, and blue nonpareil sprinkles
  • Small round candies (red, white, blue)

How to Make Red, White, and Blue Chocolate-Dipped Cheesecake Bites

Make the cheesecake:

  1. Beat cream cheese until smooth and fluffy. Add powdered sugar and vanilla, beat until combined.
  2. Whip heavy cream to soft peaks, then gently fold into cream cheese mixture.
  3. Fold in crushed cookies for texture.
  4. Cover and refrigerate at least 4 hours or overnight until firm.

Shape the bites: 5. Using a small cookie scoop or spoon, form mixture into 1-inch balls. Place on parchment-lined baking sheet. 6. Freeze for 30 minutes until very firm.

Prepare chocolate: 7. Melt each chocolate color separately in microwave (30-second intervals, stirring between) or double boiler until smooth.

Dip and decorate: 8. Working quickly, dip each frozen bite halfway into one chocolate color, letting excess drip off. 9. Place on parchment paper and immediately sprinkle with nonpareils or small candies while chocolate is wet. 10. For two-tone bites, let first layer set (about 10 minutes), then dip the other half in a different color. 11. Refrigerate finished bites for 15 minutes to set completely.
