Sweet Potato Loaf Bread 

Moist, warmly spiced, and naturally sweet—this Sweet Potato Loaf Bread is pure comfort in every slice.

Packed with real mashed sweet potatoes and a hint of cinnamon, it’s a cozy, wholesome bake that’s perfect for breakfast, snacking, or gifting.

Ingredients

For the Loaf bread:

  • 2 cups all- purpose flour
  • 1 large sweet potato
  • 1 eggs
  • ¼ cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup chocolate drops
  • ½ cup raw walnuts cracked
  • 1tsp baking powder
  • 1tsp baking soda

For the Topping: 

  • 4 egg whites
  • 1 cup powdered sugar
  • A pinch of salt

How To Make Sweet Potato Loaf Bread 

  • Prepare the Sweet Loaf Bread:
  • Preheat oven to 375F.
  • Place sweet potatoes in the oven and bake until tender.
  • Once cooked, mash sweet potatoes and let cool completely.
  • Add one egg and mix well.
  • In a bowl, mix sugar and butter, and using a mixer, mix well.
  • Add butter mixture to sweet potato mixture. Mix well.
  • Add flour, baking powder, and baking soda. Mix until you get a light, sticky mixture.
  • Add walnuts and chocolate chips. Mix and pour into a loaf pan lined with baking paper.
  • Bake for 25 – 30 minutes or until a toothpick comes out clean.
  • During this time, prepare the topping:
  • In a bowl, mix egg whites and powdered sugar, a pinch of salt. Using a mixer, beat egg whites until foamy and then form peaks.
  • Remove the sweetbread from the oven and let it cool for 10 minutes. 
  • Then add the beaten egg whites on top. Sprinkle with the crumbled breadcrumbs and return to the oven for 6-7 minutes or until the tops of the egg whites are golden brown.
  • Remove from the oven and let cool for 10 minutes before removing from the tin. Place on a wire rack and let the sweetbreads cool completely.
