• 1 cup of cookie butter (smooth or crunchy)
•1/2 cup unsalted butter
•3/4 cup granulated sugar
•1/4 cup milk
•2 tsp vanilla extract
•3 cups old-fashioned rolled oats
•1/2 cup mini chocolate chips
•1/4 tsp salt (optional)
Instructions
- Prepare the Pan: Line a baking sheet with parchment paper or wax paper. Set it aside for later.
- Cook the Sugar Mixture: In a medium-sized saucepan, melt the unsalted butter over medium heat. Once the butter is melted, add the granulated sugar and milk. Stir constantly until the mixture comes to a gentle boil. Allow it to boil for about 2 minutes while stirring. Then, remove the saucepan from the heat.
- Mix in Cookie Butter and Vanilla: Add the cookie butter and vanilla extract to the saucepan. Stir until the mixture is smooth and well combined. If you like a bit of crunch, you can use crunchy cookie butter for added texture.
- Combine with Oats: Add the rolled oats to the mixture and stir until everything is evenly coated with the gooey cookie butter mixture.
- Add Chocolate Chips: Allow the mixture to cool slightly for about 5 minutes, then fold in the mini chocolate chips. Be careful not to melt them.
- Form the Cookies: Use a spoon or cookie scoop to drop spoonfuls of the mixture onto the prepared baking sheet. Gently shape each mound into a cookie using your fingers or the back of the spoon. These cookies will firm up as they cool, so don’t worry if they look a little soft at first.
- Chill: Refrigerate the cookies for about 30-60 minutes to let them firm up completely.
