Ingredients
•2 cups granulated sugar
•1/2 cup cold water
•1/4 teaspoon cream of tartar
•1 cup strawberry jam or preserves
•2 egg whites
Instructions
- Lightly coat an 8-inch square baking pan with cooking spray or butter.
- Add the sugar, water, and cream of tartar to a medium pot. Cook over medium heat until it starts bubbling.
- Continue cooking until the mixture reaches 245°F (118°C). You can test it by dropping a small amount into cold water – it should form a soft ball that holds its shape but is still bendable.
- Mix in the strawberry preserves and let it return to a boil briefly. Take the pot off the heat.
- Beat the egg whites in a large bowl until they form stiff peaks. While mixing constantly, very slowly drizzle the hot strawberry syrup into the egg whites. Keep beating until the mixture becomes thick and glossy.
- Spread the mixture evenly in your greased pan. Let it sit at room temperature for about 2 hours until set. Cut into squares and serve.
Notes
- Make sure your egg whites are at room temperature for the best volume, and try to make these on a dry day – humidity can affect how well they set.
- You’ll also want to prepare all your ingredients before you begin, since the timing matters once you start cooking the sugar syrup.
