This Strawberry Fudge is soft, creamy, and bursting with sweet strawberry flavor. Made with fresh egg whites for a light, fluffy texture, this old-fashioned fudge melts in your mouth and is perfect for gifting or indulging!

Ingredients

•2 cups granulated sugar
•1/2 cup cold water
•1/4 teaspoon cream of tartar
•1 cup strawberry jam or preserves
•2 egg whites

Instructions

  1. Lightly coat an 8-inch square baking pan with cooking spray or butter.
  2. Add the sugar, water, and cream of tartar to a medium pot. Cook over medium heat until it starts bubbling.
  3. Continue cooking until the mixture reaches 245°F (118°C). You can test it by dropping a small amount into cold water – it should form a soft ball that holds its shape but is still bendable.
  4. Mix in the strawberry preserves and let it return to a boil briefly. Take the pot off the heat.
  5. Beat the egg whites in a large bowl until they form stiff peaks. While mixing constantly, very slowly drizzle the hot strawberry syrup into the egg whites. Keep beating until the mixture becomes thick and glossy.
  6. Spread the mixture evenly in your greased pan. Let it sit at room temperature for about 2 hours until set. Cut into squares and serve.

Notes

  • Make sure your egg whites are at room temperature for the best volume, and try to make these on a dry day – humidity can affect how well they set.
  • You’ll also want to prepare all your ingredients before you begin, since the timing matters once you start cooking the sugar syrup.
