Super Simple Strawberry Fudge

This homemade strawberry fudge is like a cross between marshmallows and fudge.

They’re wonderfully light and airy, with a sweet strawberry flavor that makes them perfect for spring and summer treats.

While they take a bit of patience to make (you’ll need a candy thermometer), the result is worth the effort.

The fresh, pink squares look beautiful on a dessert tray and make lovely gifts when packed in wax paper.

Why You’ll Love This Recipe

This fudge practically melts in your mouth, and the strawberry flavor comes through beautifully, making them taste fresh and fruity rather than artificial.

They’re also budget-friendly since they use basic pantry ingredients (plus some strawberry preserves).

These squares are also versatile – serve them as an after-dinner sweet, pack them in lunch boxes, or add them to hot chocolate for a strawberry twist.

They last for several days in an airtight container, so you can make them ahead for parties or gifts.

And unlike many homemade candies, they don’t require any special equipment beyond a candy thermometer and electric mixer.

Plus, they’re naturally gluten-free, making them a great option for friends with dietary restrictions. You can even swap in different preserves—raspberry or apricot work wonderfully too!

Ingredients You’ll Need

  • 2 cups granulated sugar
  • 1/2 cup cold water
  • 1/4 teaspoon cream of tartar
  • 1 cup strawberry jam or preserves
  • 2 egg whites

How to Make Strawberry Fudge

  1. Lightly coat an 8-inch square baking pan with cooking spray or butter.
  2. Add the sugar, water, and cream of tartar to a medium pot. Cook over medium heat until it starts bubbling.
  3. Continue cooking until the mixture reaches 245°F (118°C). You can test it by dropping a small amount into cold water – it should form a soft ball that holds its shape but is still bendable.
  4. Mix in the strawberry preserves and let it return to a boil briefly. Take the pot off the heat.
  5. Beat the egg whites in a large bowl until they form stiff peaks. While mixing constantly, very slowly drizzle the hot strawberry syrup into the egg whites. Keep beating until the mixture becomes thick and glossy.
  6. Spread the mixture evenly in your greased pan. Let it sit at room temperature for about 2 hours until set. Cut into squares and serve.

A Few Quick Notes:

Make sure your egg whites are at room temperature for the best volume, and try to make these on a dry day – humidity can affect how well they set.

You’ll also want to prepare all your ingredients before you begin, since the timing matters once you start cooking the sugar syrup.
