Ingredients
For the Filling:
•4 cups fresh strawberries, hulled and sliced
•1/2 cup granulated sugar
•1 tbsp cornstarch
•1 tsp vanilla extract
For the Cobbler Topping:
•1 cup all-purpose flour
•1/2 cup granulated sugar
•1 tsp baking powder
•1/4 tsp salt
•1/2 cup (1 stick) unsalted butter, melted
•1/2 cup whole milk
Instructions
1. Preheat your oven to 375°F (190°C). Grease a 9-inch baking dish or pie pan with butter or cooking spray.
2. In a large bowl, mix the sliced strawberries with sugar, cornstarch, and vanilla extract. Toss until the strawberries are evenly coated. Pour the mixture into the prepared baking dish.
3. In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the melted butter and milk, stirring until a smooth batter forms.
4. Spoon the batter over the strawberries, spreading it out as evenly as possible. Don’t worry if some gaps remain; the batter will expand as it bakes.
5. Bake in the preheated oven for 35–40 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
6. Let the cobbler cool for at least 10 minutes before serving. Pair with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat!
