Ingredients
For the Cheesecake Mixture:

12 oz cream cheese, softened

1/3 cup powdered sugar

1 tsp vanilla extract

1/2 cup heavy cream

1 cup crushed vanilla wafers or graham crackers
For Dipping & Decorating:

12 oz white chocolate chips or melting wafers

8 oz dark chocolate chips or melting wafers

4 oz red candy melts or red chocolate

4 oz blue candy melts or blue chocolate

Red, white & blue nonpareil sprinkles

Small round candies (optional for added decoration)
Instructions
- Beat cream cheese until smooth and fluffy. Add powdered sugar and vanilla, beat until combined.
- Whip heavy cream to soft peaks, then gently fold into cream cheese mixture.
- Fold in crushed cookies for texture.
- Cover and refrigerate at least 4 hours or overnight until firm.
- Using a small cookie scoop or spoon, form mixture into 1-inch balls. Place on parchment-lined baking sheet.
- Freeze for 30 minutes until very firm.
- Melt each chocolate color separately in microwave (30-second intervals, stirring between) or double boiler until smooth.
- Working quickly, dip each frozen bite halfway into one chocolate color, letting excess drip off.
- Place on parchment paper and immediately sprinkle with nonpareils or small candies while chocolate is wet.
- For two-tone bites, let first layer set (about 10 minutes), then dip the other half in a different color.
- Refrigerate finished bites for 15 minutes to set completely.
