Ingredients
For the crust:
•1 ½ cups graham cracker crumbs
•⅓ cup sugar
•6 tablespoons butter, melted
For the peanut butter layer:
•1 cup creamy peanut butter
•1 ¼ cups powdered sugar
•½ cup butter, softened
•1 teaspoon vanilla extract
For the chocolate layer:
•1 ½ cups heavy whipping cream
•1 ½ cups semi-sweet chocolate chips
•1 tablespoon butter
•¼ teaspoon vanilla extract
For topping:
•¼ cup mini chocolate chips (optional)
Instructions
1. Prepare the crust:
◦In a medium bowl, combine graham cracker crumbs and sugar. Pour in the melted butter and mix until everything is evenly coated.
◦Press the mixture into the bottom of a 9×13-inch baking dish. Use a spatula to pack it down tightly.
◦Refrigerate the crust while you prepare the peanut butter layer.
2. Make the peanut butter layer:
◦In a large mixing bowl, beat together the peanut butter, powdered sugar, softened butter, and vanilla extract until smooth and creamy.
◦Spread the peanut butter mixture evenly over the graham cracker crust layer. Smooth it out with a spatula, then refrigerate for about 30 minutes to allow it to firm up.
3. Prepare the chocolate layer:
◦In a medium saucepan, heat the heavy whipping cream over medium heat until it just begins to simmer. Remove from heat.
◦Add the chocolate chips and butter to the cream and stir until everything is melted and smooth.
◦Stir in vanilla extract, then let the chocolate mixture cool for a few minutes.
4. Assemble the dessert:
◦Once the peanut butter layer has set, pour the cooled chocolate mixture over the peanut butter layer and spread it evenly.
◦Refrigerate for at least 2 hours, or until the dessert is fully set and firm.
5. Serve:
◦Before serving, sprinkle mini chocolate chips on top for an extra touch of sweetness and texture.
◦Slice into bars and enjoy!
