Ingredients
For the crust:
•24 Oreo cookies (or any chocolate sandwich cookies)
•5 tablespoons unsalted butter, melted
For the filling:
•1 cup creamy peanut butter
•8 oz cream cheese, softened
•1 cup powdered sugar
•1 teaspoon vanilla extract
•1 1/2 cups heavy whipping cream
For the topping:
•1/2 cup crushed Oreos (about 4-5 cookies)
•1/2 cup mini chocolate chips (optional)
Instructions
Step 1: Prepare the Oreo Crust
1. Start by placing the Oreo cookies in a food processor or a resealable plastic bag. Crush the cookies until they form fine crumbs.
2. In a bowl, mix the crushed cookies with the melted butter until fully combined.
3. Press the mixture into the bottom of a 9-inch pie dish to form an even crust. Use the back of a spoon or the bottom of a glass to press it down tightly.
4. Place the crust in the refrigerator to chill while you prepare the filling.
Step 2: Make the Peanut Butter Filling
1. In a large mixing bowl, beat together the peanut butter, cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
2. In a separate bowl, whip the heavy cream until stiff peaks form. This will take about 2-3 minutes with an electric mixer.
3. Gently fold the whipped cream into the peanut butter mixture until fully incorporated. Be careful not to deflate the whipped cream.
4. Spoon the peanut butter filling into the prepared Oreo crust and spread it out evenly with a spatula.
Step 3: Add the Topping
1. Sprinkle the crushed Oreos over the top of the peanut butter filling.
2. If desired, add mini chocolate chips on top for an extra chocolatey crunch.
Step 4: Chill and Serve
1. Cover the pie with plastic wrap or aluminum foil and place it in the refrigerator.
2. Chill for at least 4 hours, or preferably overnight, to allow the pie to firm up.
3. Once set, slice and enjoy!
