Peanut Butter Bird’s Nest Cookies are a charming no-bake treat with a creamy peanut butter and oat base, topped with candy eggs for a festive and crunchy delight that’s perfect for any occasion.

  • Total Time: 20 minutes
  • Yield: 18-20 cookies 1x

Ingredients

• 1 cup creamy peanut butter
•1/2 cup unsalted butter (softened)
•1 1/2 cups powdered sugar
•3 cups quick oats
•1/2 cup milk chocolate chips (or your favorite chocolate)
•Candy eggs (jelly beans, mini chocolate eggs, or any candy of your choice)

Instructions

  1. Prepare the Base: In a medium saucepan over low heat, melt the peanut butter and butter together. Stir occasionally to ensure they don’t burn, until smooth and creamy.
  2. Add Sugar: Once the peanut butter and butter are melted and combined, add the powdered sugar. Stir until the mixture is smooth and there are no lumps of sugar remaining.
  3. Mix in the Oats: Remove the saucepan from heat. Gradually stir in the quick oats, mixing thoroughly to coat the oats in the peanut butter mixture. This will form the base of your bird’s nest cookies.
  4. Form the Nests: Line a baking sheet with parchment paper. Scoop spoonfuls of the mixture and roll them into balls. Then, gently press down the center of each ball with your fingers or the back of a spoon to create a nest-like indentation. Repeat with the rest of the mixture.
  5. Add the Candy Eggs: Place a few candy eggs (or jelly beans) in the center of each nest. Press them down gently so they stay in place.
  6. Chill the Cookies: Place the cookies in the refrigerator for at least 30 minutes, or until they’re firm and set.
  7. Drizzle Chocolate: While the cookies chill, melt the chocolate chips in a microwave-safe bowl in 20-30 second intervals, stirring in between, until smooth. Drizzle the melted chocolate over the cookies using a spoon or a small piping bag.
  8. Final Chill: Return the cookies to the refrigerator for another 10-15 minutes to allow the chocolate to harden.
  9. Serve and Enjoy: Once the cookies are set and the chocolate has hardened, they’re ready to serve! Enjoy these adorable, sweet, and crunchy bird’s nest cookies with friends and family.
