Delight in the earthy, subtly sweet flavors of these Matcha Cupcakes. Made with matcha powder and a blend of butter and sucralose sweetener, they offer a lighter, yet flavorful dessert option. Perfect with or without frosting for any occasion.

Ingredients

•1/4 cup butter
•1/4 cup vegetable oil butter spread (such as Smart Balance®)
•1/2 cup granular no-calorie sucralose sweetener (such as Splenda®)
•1/2 cup white sugar
•3 egg whites
•1 teaspoon vanilla extract
•1 teaspoon almond extract
•1 1/2 cups cake flour
•2 teaspoons baking powder
•2 tablespoons green tea powder (matcha)
•1/2 cup nonfat milk

Instructions

1. Preheat oven to 350°F (175°C). Grease or line 12 muffin cups.
2. Beat butter, vegetable oil butter spread, sweetener, and sugar until light and fluffy.
3. Add egg whites one at a time, beating well after each addition. Mix in vanilla and almond extracts.
4. In a small bowl, combine flour, baking powder, and matcha. Alternately add dry ingredients and milk to the batter, mixing until just incorporated.
5. Pour batter into prepared cups and bake for 20 minutes. Cool completely on a wire rack.
6. Add frosting, if preferred. Lightly sprinkle with additional matcha powder. Alternatively, you can mix a teaspoon into frosting for more of a green look. Enjoy!
