Instructions
1. Prepare the Golden Oreos: Start by crushing the Golden Oreos into fine crumbs. You can do this by placing them in a zip-top bag and using a rolling pin to crush them, or by pulsing them in a food processor. Set the crumbs aside for later.
2. Make the strawberry mousse: In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Whip the mixture on high speed using a hand mixer or stand mixer until soft peaks form. Be careful not to over-whip. Gently fold in the strawberry puree, mixing until just combined. The mousse should be light and fluffy.
3. Assemble the parfaits: Begin layering the parfaits in clear glasses or dessert cups. Start with a spoonful of crushed Golden Oreos at the bottom of each glass, pressing them gently down to form a crust. Next, add a layer of the strawberry mousse, followed by a few slices of fresh strawberries. Repeat the layers until you reach the top of the glass.
4. Finish with garnish: Top each parfait with a dollop of strawberry mousse, a few more slices of strawberries, and a sprinkle of crushed Golden Oreos. For a finishing touch, you can sprinkle some white chocolate chips on top for a bit of extra sweetness and visual appeal.
5. Chill and serve: Refrigerate the parfaits for at least an hour before serving to allow the flavors to meld and the dessert to firm up. Serve chilled and enjoy!
