Instructions
1. Allow the ice cream to sit out for a few minutes to soften.
2. Add mini rainbow candy-coated chocolate chips to a shallow dish.
3. Scoop the softened ice cream onto one side of a cookie and gently press another cookie on top. Ensure the ice cream reaches the edge of the cookie so the chocolate chips stick.
4. Roll the edges of the ice cream sandwich in the mini rainbow candy-coated chocolate chips until well coated. Repeat with the remaining cookies.
5. Chill the sandwiches for at least one hour or longer, until the ice cream hardens.
