•1 cup granulated sugar
•1/2 cup unsalted butter
•1/4 cup milk
•2 tablespoons cocoa powder
•1 teaspoon vanilla extract
•1/2 teaspoon peppermint extract
•3 cups quick oats
•1/2 cup mini chocolate chips (optional)
•1/4 cup crushed candy canes (or peppermint candies)
Instructions
- Prepare a Baking Sheet: Line a baking sheet with parchment paper or wax paper. Set aside.
- Combine Sugar, Butter, and Milk: In a medium saucepan, combine the sugar, butter, and milk. Heat over medium heat, stirring occasionally until the butter melts and the mixture comes to a rolling boil.
- Add Cocoa Powder: Stir in the cocoa powder until fully combined, creating a smooth chocolate mixture.
- Boil the Mixture: Allow the mixture to boil for 1-2 minutes, stirring occasionally. Be sure not to overcook it.
- Remove from Heat: After boiling, remove the saucepan from the heat. Stir in the vanilla extract and peppermint extract until well combined.
- Mix in Oats: Add the oats to the saucepan and stir until fully coated with the chocolate mixture.
- Add Optional Ingredients: If you’re using mini chocolate chips, fold them in now. The heat from the mixture will melt them slightly, making the cookies even more indulgent.
- Scoop and Form Cookies: Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet. You can shape them into round mounds or flatten them a bit with the back of the spoon, depending on your preference.
- Top with Crushed Candy Canes: While the cookies are still soft, sprinkle the crushed candy canes over the top of each cookie.
- Let Set: Allow the cookies to set at room temperature for about 30 minutes to 1 hour, or until they have hardened. You can also speed up this process by refrigerating them for about 20 minutes.
