•2 cups plain Greek yogurt
•3 tablespoons honey or maple syrup
• 1 teaspoon vanilla extract
• 1 cup fresh strawberries, diced
• 1 1/2 cups dark chocolate chips
• 1 tablespoon coconut oil
Instructions
1.Prepare the Yogurt Layer:
- In a medium bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
- Gently fold in the diced strawberries.
2. Assemble the Bars:
- Line an 8×8-inch baking pan with parchment paper.
- Pour the yogurt mixture into the pan and spread it evenly.
- Freeze for 2-3 hours or until fully set.
3. Prepare the Chocolate Coating:
- In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 20-second intervals, stirring between each interval until smooth.
4. Coat the Yogurt Bars:
- Remove the frozen yogurt slab from the pan and cut it into bars.
- Dip each bar into the melted chocolate to coat completely. Place them on a parchment-lined tray.
- Return the bars to the freezer for 15-20 minutes to set the chocolate.
5. Serve and Store:
- Enjoy immediately or store the bars in an airtight container in the freezer for up to two weeks.
