These Strawberry Rhubarb Dessert Cups are a refreshing and fruity treat with a perfect balance of tart rhubarb and sweet strawberry JELL-O. Light, simple, and perfect for warm-weather gatherings!

Ingredients

• 1 pound fresh rhubarb, cut into 1/2-inch thick slices 
• 1/2 cup white sugar 
• 1 pkg. (4 serving size) Strawberry-flavored JELL-O

Instructions

  1. Combine rhubarb and sugar in a large saucepan. Stir in 1 cup  water.
  2. Cook and stir on medium heat until mixture comes to a boil, then  continue to boil for 2 min. Remove from heat. Stir in gelatin until completely dissolved.
  3. Pour evenly into 7 dessert cups.
  4. Refrigerate 3 hours or until firm. Garnish each serving with 1 Tbsp. thawed cool whip and a strawberry, if desired.
