Ingredients

For the Crust:
• 1 cup all-purpose flour
•1/2 cup unsalted butter, softened
•1/4 cup powdered sugar
•1/4 teaspoon salt
 
For the Rhubarb Layer:
•3 cups fresh rhubarb, diced into 1/2-inch pieces
•1 cup granulated sugar
•2 large eggs
•2 tablespoons all-purpose flour
•1/2 teaspoon vanilla extract
•1/4 teaspoon salt
 
Optional Topping:
•Powdered sugar for dusting

Instructions

  1. Prepare pan: Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. Make crust: In a bowl, combine flour, softened butter, powdered sugar, and salt. Mix until mixture resembles coarse crumbs and holds together when pressed.
  3. Press crust: Press mixture evenly into the bottom of prepared pan. Bake for 15 minutes until lightly golden.
  4. Prepare rhubarb layer: While crust bakes, whisk together eggs, granulated sugar, flour, vanilla, and salt until smooth. Stir in diced rhubarb.
  5. Assemble: Pour rhubarb mixture over hot crust, spreading evenly.
  6. Bake: Return to oven and bake for 25-30 minutes until center is set and top is lightly golden.
  7. Cool: Cool completely in pan before lifting out using parchment overhang and cutting into bars.
  8. Serve: Dust with powdered sugar if desired before serving.
