Ingredients
•1 cup (2 sticks) unsalted butter, melted
•1 cup packed light brown sugar
•1/2 cup granulated sugar
•2 large eggs
•2 teaspoons vanilla extract
•2 cups all-purpose flour
•1/2 teaspoon salt
•1/2 teaspoon baking powder
•1/4 teaspoon cinnamon
•2 medium apples (Granny Smith or Honeycrisp), peeled and diced into 1/2-inch pieces
•1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F. Line a 9×13 inch pan with parchment paper, leaving overhang for easy removal.
- In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Beat in eggs one at a time, then vanilla.
- In a separate bowl, whisk together flour, salt, baking powder, and cinnamon. Add dry ingredients to wet ingredients, stirring just until combined.
- Fold in diced apples and walnuts (if using). The batter will be thick.
- Spread evenly in prepared pan. Bake for 28-32 minutes until golden brown and a toothpick inserted in center comes out with just a few moist crumbs.
- Cool completely in pan before cutting into squares.
Notes
- Don’t overmix the batter or the blondies will be tough
- Cut apples into uniform pieces so they cook evenl
- Store covered at room temperature for up to 4 days
These have a perfect chewy texture with bursts of sweet-tart apple in every bite. The brown sugar gives them that signature blondie flavor that’s distinct from brownies.
